SPREAD THE LOVE!
I have to admit I was late to the whole Trader Joe’s party. It’s not that I wanted to be. I so hate being late for things, especially parties though for those I try to be fashionably late. No hostess likes guests showing up early or as the clock strikes the time. A few minutes is fine but never so tardy that you look rude. For ages, I had to endure my friends gawking at me. “OMG. You’ve NEVER been to Trader Joe’s?!? Are you on another planet?!?” Look, the closest one to me was an hour away. I don’t care how good it is. I’m not driving an hour just to go to a supermarket.
But then something wonderful happened. They built one 20 minutes away, which is a lot better than an hour. So one day, I went. And boy was I amazed. One thing everyone raved about is that Speculoos Cookie Butter. A friend of mine who moved across the pond tells me it is just like Biscoff spread, which is hugely popular there. Of course, after I found this (and too many other things I probably didn’t need but bought anyway), I had to put it to good use so I put it in these cookies.
