Breakfast Just Got Better With Snickerdoodle Muffins!

LET’S ROLL!

So you already know you don’t need an egg to make these. But what about these other ingredients? Out of nutmeg, or perhaps not a big fan of it? No problem. Just replace it with cinnamon. Out of cream or tartar or vanilla? You don’t technically need them to complete the recipe. It will turn out fine without those things. But you DO need to spray your muffin pan good, especially on the top, to keep these guys from sticking.

Once these are a nice light golden brown, take them out while they’re still warm (but NOT hot! Ouch!) and completely submerge them into a nice bath of melted butter. Then take them and roll them in the cinnamon sugar mixture. Let them cool on wax paper. You can enjoy them while they’re still warm which is almost as awesome as getting a hot and fresh glazed donut from Krispy Kreme right off the line or you can enjoy them once they’ve cooled. However you want to eat them I can guarantee that you WILL enjoy them no matter what!
