Buckeye Brownie Cookies – Yummy!

IT ONLY LOOKS COMPLICATED!

I’ve said it before…while I’m completely willing and able to make my own brownie batters, cookie doughs, pie crusts, cakes and whathaveyou, sometimes I am so thrilled for a recipe that requires the use of mixes. It’s perfect for when I’m feeling lazy or maybe I’m short on ingredients that allow me to make it from scratch. This kind of recipe is great for beginners because of the simplicity. You’ll mix the brownie mix with cream cheese, butter and eggs. It will be really thick and sticky stuff, just so you know.

You’ll mix powdered sugar with the peanut butter and then you’ll put that on top of your cookies. Press down as you do because that peanut butter will not spread. If you don’t, your cookies will be too tall and won’t bake up right and you’ll have some wonky-looking ones. Once these cool, top with that chocolate frosting and feel your whole insides turn happy.
