THE EASIEST COOKIES EVER!
I have always had a thing for butterscotch but it’s not something I have all that often. My mom would sometimes make butterscotch pudding for us instead of chocolate pudding. That’s good stuff. But once I became pregnant with my first child, one day out of the clear blue sky, I got the most wicked craving for butterscotch. No joke. It was so strong a craving, I couldn’t think about anything else. I cried for it. CRIED. Like a baby. Oh, pregnancy cravings!
At the time, I was living abroad so finding butterscotch anything was impossible. There was none. It made me cry even harder. Boy, was I homesick. One of my cousins felt my pain and immediately shipped me a box filled with butterscotch pudding, butterscotch candies and a bunch of other butterscotch-flavored items. For good measure, she chucked in caramel and chocolate too. If you know anyone living abroad, please make their day by sending them a care package of goodies they can’t get where they are living. You have no idea how special you will make them feel. If only I’d had this recipe back then. It would have been perfect. But hey, there’s nothing like making up for lost time.
