I’m pretty sure I’ve talked about how I didn’t care for carrot cake when I was younger. When my kids are picky about something, I remind myself of this fact. I hated carrot cake, eggplant and a few other things until I hit adulthood. Now I can’t keep away. Though an eggplant cake would probably be disgusting, carrot cake somehow works. And my kids like it which is great because they have no idea of the magnitude of carrots involved within. Or other fairly healthy ingredients. But sometimes you want a carrot cake and you really don’t want to go to all that trouble of making a cake. Layering it and frosting it takes time and carrot cake is one of those that you want to serve up looking gorgeous. You can’t just slop frosting on it and present it. Oh no.
