Incredible Carrot Cake Bars!

AND THE SECRET INGREDIENT IS!

Did you guess mayonnaise? WRONG! How about sour cream? WRONG AGAIN! The secret to this is so insanely brilliant. It’s baby food! You’ll use carrot baby food, apricot baby food and applesauce baby food. Genius! Now the recipe calls for the jarred stuff but if you’re a mama with a little one around, perhaps you have some homemade pureed carrots, apricot and applesauce and if that’s the case, go ahead and use that. Or even if you don’t have babies around the house, you can absolutely make your own purees.

These are so easy to make. Just mix everything up and the walnuts get added last, if you want them. You can leave them out if you wish or if you worry about serving someone with a nut allergy. Once these have cooled, you can get the frosting ready. You’ll want to store these in the fridge because of the cream cheese, though when you take them somewhere, expect to come home with your empty platter. These disappear fast!
