Impressive Chocolate-Covered Cherry Cookies!

CHERRIES MAKE THEM MERRY!

Ok, so these are not at all hard. If you’re new to baking, you’ll love these because they are a good way to build up your confidence. They are time consuming and that is only because you need to shape the dough into 48 balls. AND THEN you will stuff those balls of chocolate cookie dough with the maraschino cherries. Oh, and don’t forget that you need to blot those cherries dry before you’ll do that. You’ll use the cherry juice in the frosting so it’s a chocolate-cherry frosting. It incorporates the juice that would otherwise be wasted and it gives these cookies that extra something special.

Another thing to keep in mind is that with this recipe, you will frost the cookies BEFORE you bake them. The frosting will melt and spread over each cookie, covering up the bit of cherry that you can still see. That way, when they’re finished, the cherry is like a surprise in the center of the cookie, just like cherry cordials. So fabulous!
