CELEBRATE GOOD TIMES, COME ON!
I swear, it is cake season in this house. First it was my birthday and now it’s Mom’s birthday. We’re surprising her with a visit. Mom is the superior chef and baker in the family and even though I hold my own, she shoos me out of the kitchen unless her drink needs a refresher or she wants me to taste-test something. It’s not that she doubts me, but rather that it is HER kitchen and she’s the queen of that castle. And I can dig that. That’s how I feel in my kitchen. I cannot stand when anyone invades my territory while I’m busy baking. It makes me nuts.
Mom doesn’t like us to make a fuss over her. She’s a bit of a martyr but we love her. To ensure she didn’t make any other plans, we enlisted the help of Dad who is going to keep her occupied until we arrive with this gorgeous cake. Coconut cake with coconut cream cheese frosting.
