IF YOU LIKE PIÑA COLADAS…
Ah, yes. In my mind, I am sitting on the beach, miles away from screaming children, loads of laundry, dirty dishes and all my responsibilities. Sipping on a refreshing piña colada. And then there’s Marco who brings me another one before I can even ask. He’s handsome, and creating a lovely, cool breeze for me with a large palm frond. He’s got the kind of arms that make me drool. Oh wait. I am drooling. Dear Lord. Sorry about that. I must have been daydreaming on the job again.
Anyway, there is something about coconut that makes me think tropical vacation. But instead of it being a real vacation, it’s just for my taste buds. I guess that will have to do for now. And this cake will do just that quite nicely. It’s a coconut poke cake. I love poke cakes because you can never ever wind up with a dry cake. I hate when a cake comes out dry.
