WORTH THE EFFORT!
My older brother wanted to make a lemon meringue pie when we were kids. I’m more than 5 years younger than him so I really wasn’t too interested in helping. I was more interested in eating it. I can’t even recall WHY he wanted to make this pie. I’ll have to call him and ask him. Anyway, when my brother made his lemon meringue pie, the meringue came out really foamy. More like sea foam than the consistency it SHOULD have had. As a little kid, I remember this being a huge deterrent for me. It reminded me of spit and I wanted nothing to do with this pie. Big brothers: ruining things for little sisters for years to come.
It wasn’t until I reached adulthood when I finally got into lemon meringue pie because I finally had one that was made properly. What a difference! Getting that meringue right is crucial. As is getting the filling and crust right. Ok, so this one is just a little bit challenging but I swear it is absolutely worth every bit of effort you put into it.
