Light And Luscious Lemon Bar Cupcakes!


Lemon is to spring what pumpkin spice is to fall. There, I’ve said it. But hey, that doesn’t mean I don’t love both those flavors. Honestly though, if I had to pick, despite loving colder weather much more, I’m more partial to the lemony flavors than pumpkin spice. It’s fresh, it’s light and it’s really more of an upbeat and energizing taste. Pumpkin spice makes me want to go hibernate, which isn’t necessarily a bad thing, especially when the weather outside is frightful. But then the weather outside is delightful, lemon anything is a must. I love lemon bars and I love lemon cakes so combining them into these lemon bar cupcakes is nothing short of incredible.

These are so perfect for a summer party. I decided to try these out for an informal barbecue we had with some of our friends with kids. We all had a blast and when I brought these out, 10 minutes later there wasn’t a single crumb left on the plate. I’m just happy I got one before they were hoovered up by everyone.
