Old-Fashioned Carrot Cake With Pecan Frosting!

TAKE YOUR TASTE BUDS BACK IN TIME!

The other day, I was looking for something in our closet and I got distracted with a box of old photos. My dad had given them to me on our last visit and I’d just put them away when we had come home, making a mental note to check them out later. Obviously I forgot. Until now. And for an hour, I disappeared into the closet, looking at old photos of my grandparents when they were young and good-looking, before old age made them looking wrinkled and weary. As I looked at the young version of my grandma in front of me, it was hard not to cry as I thought of the last time I had ever seen her.

Many of the photos were from big family dinners too. You could see all the home-cooked goodness on the table and Grandma’s incredible cakes and pies she made from scratch. So every time I find a classic recipe like this carrot cake, it makes me think of these old timey times and it makes me happy. Carrot cake was something I never got into until I was an adult but I adore how old-fashioned this is, like it’s straight from a bygone era.
