Fun Peanut Butter Crunch Éclair Bars!

GREAT FOR A CROWD!

If you really want to light up a room, smile as you place a tray of these down. People will trample each other to come talk to you about these. Your kids will never complain about eating flake cereal ever again when you serve it this way. Good luck getting them to eat flakes for breakfast after these though. They’re a tough act to follow. First, you’ll boil the corn syrup and sugar together. Then, you’ll remove it from the heat and add the peanut butter, followed by the frosted flakes. You’ll pour this mixture into your pan.

Next, you’ll deal with the pudding layer. It will come out a bit lumpy. Some lumps are okay but try to get most of them out of there with your whisk. Once it’s smooth, pour it onto the crust. In yet another saucepan, you’ll melt the butter and chocolate chips together. Alternatively, you can do this in the microwave. Once it’s melted, spread it on top of everything. Then let it chill for at least an hour. You can serve these chilled or at room temperature. However you serve them, everyone will adore them, and you for making them.
