EXCELLENTLY EXOTIC!
Earlier this week at the gym, I was busy on the elliptical trainer, listening to “Cabo Wabo” by Van Halen. Unless you’re a fan, you won’t know the song. It’s not one they overplay on the radio. Anyway, as I ran along challenging myself, this insanely handsome, well-chiseled man began lifting weights right in front of me. And suddenly, I was laying on a lounge chair in Maui while the ocean crashed on the shore and Mr. Muscles was rubbing coconut-scented tanning oil into my skin and… And then, I came crashing back to reality when I somehow missed a step and almost fell right off the equipment. Now I’m THAT girl.
Anyway, I decided I better keep my tropical fantasies a bit more G-rated so here’s another tropical daydream of mine…this pineapple cake with coconut pecan icing. My husband needed a dessert to take with him today for a lunchtime potluck at his office and I sent him with this. He called a short while ago to tell me what a hit it was.
