TURN YOUR FROWN UPSIDE DOWN!
I love pineapple upside down cake. It makes me think of my grandma who has been gone for a long time now. She used to make it so often that the memory of it in her large Pyrex baking dish is burned in my brain. We’d beg her to make it and she would always oblige. I miss her. I’ve had pineapple upside down cake since then of course, and it still makes me smile because it makes me think of her. Plus, I don’t think you can be sad when you eat a cake that’s so moist through and through and that has pineapple in it. If you’ve ever made it before, you know it’s really hard to mess up too.
When I saw this recipe for pineapple upside down cupcakes, I had to hit myself. It was yet another “why didn’t I think of this before?!?” moment in my life. But I’m so happy someone else did because now we can all make them. These are, like the full-fledged cake, moist and delicious and are a great idea for a party of any kind.
