Irresistible Raspberry Cream Cheese Coffee Cake!

BRING GREATNESS BACK TO YOUR BREAKFAST TABLE!

You won’t want to make this every day for breakfast, but it is good to know that it’s easy enough to make in the morning without too much of a fuss. This is great for when you have overnight guests or you just want to make your weekend breakfast special. Of course, feel free to slice off a bit here and there throughout the day too. It is intensely irresistible.

Sour cream makes this so moist inside. You’ve probably noticed that with other cakes you’ve made that when you have sour cream as an ingredient, your cake will be moist and wonderful. Some people would rather not eat sour cream or perhaps don’t have it on hand in the house and if that’s you, you can totally use plain Greek yogurt instead as long as it’s thick. Even the vanilla-flavored Greek yogurt would be good. Make your filling first and set it aside. Then make the batter. Spread the batter into your pan and smooth it with a spatula and then spread the cream cheese filling on top of it. Your raspberries go on top of the cream cheese filling. Make the streusel topping and put it on top of the raspberries. It should be crumbly with small crumbs no bigger than a pea. Let it cool after baking and enjoy it with lots of coffee!
