Fabulous Triple Layer Cookie Bars!

NO MORE CRAZY TRAIN!

I’m happy to report that my family loved these and I was able to disembark from the crazy train that was on a high-speed collision course with my sanity. I still have that one last shred that I am clinging on to. For now. Anyway, these are so super easy. Even though they say “cookie” in the name but it’s really a brownie. Go figure. Whatever you want to call it, you will love it. Mix the first 6 items and then add the butter until you get a crumbly blend. Next comes the egg. And then spread it in your pan to bake.

Then the fun happens. You’ll bake for 8 minutes and take it out to add the coconut and sweetened condensed milk. When that’s done, you’ll microwave the chocolate chips and peanut butter together, stirring until they become smooth. Take care not to overcook them in there though or you’ll have a gross burntish mess and no one wants that. Once smooth, spread the chocolate-peanut butter melty goodness over the top. Once they’ve cooled, you will be THE coolest in the eyes of your family for making such an amazing dessert. Score!
