Magnificently Moist Lemon Tea Cakes!

LET THEM EAT CAKE…TEA CAKE!

Invite everyone you know because this recipe will give you a whopping 8 ½ dozen lemon tea cakes. And they will disappear fast. The good news is that although these look fancy and taste spectacularly, they are so easy to make. In the same time it would take for you to run to the bakery, you can have these ready.

First, you’ll use your mixer to cream the butter, cream cheese and sugar together. Get it light and fluffy, and then add each egg one at a time. Make sure to beat each egg very well before you add the next one. Then comes the lemon juice, extracts and lemon zest. And finally, the flour, which you’ll beat until just moistened. Don’t overdo it! Pour the batter into your greased mini muffin tins. When these are done baking let them sit in the pan for about 5 minutes before popping them out to cool on your wire racks. After they cool, make the glaze and dip the tops of the tea cakes into it. Allow the glaze to dry. Then arrange them on pretty platters for the perfect party plan!
