These Pineapple Upside Down Cupcakes Are A Tropical Treat!

NEVER A DOLE MOMENT!

Hahahaha! Get it? Dole and dull? Hahaha…heh heh…um, yeah. Anyway, I should tell you these are jumbo cupcakes. They’re really REALLY big. Oh but so good! You want them big. Bigger is better and more cupcake makes more happiness. It’s true! Buuuuuut…I suppose this could work with smaller muffin cups, but not the mini ones. For these, you want to line the bottom of the muffin cups with greased up wax paper. Then you’ll melt the butter with the brown sugar and corn syrup, and pour that into the muffin cups.

Now the fun begins with the pineapple slice and a cherry in the center of that. Make your batter and pour it on top of that. When this finishes baking, let it cool for a few minutes. Then you can flip them over onto your wire rack to cool the rest of the way. The original poster suggests an optional garnish of whipped topping. While you technically can’t go wrong with that, I’ve got to tell you that tasting these on their own is absolute perfection. Try it and you’ll see!
